Maison Simonnet-Febvre own vineyards in Chablis, Chablis Premier Cru Mont de Milieu and Chablis Grand Cru Preuses.
In the Autumn of 2019 Simonnet-Febvre launched their first Organic Chablis range consisting of four wines: Petit Chablis, Chablis, Chablis Premier Cru Montmains and Chablis Premier Cru Fourchaume. These grapes are all sourced from certified vineyards and the wines are made in house by Paul Espitalie, Simonnet-Febvre's new winemaker and Director.
Simonnet-Febvre makes all their still wines at their new winery in Chitry (just outside Chablis). This winery has modern facilities, allowing consistently high quality wines to be produced. A building project is currently underway to extend the winery in which they will continue to make and age their fine wines.
Simonnet-Febvre makes a sparking Crémant de Bourgogne, the only sparkling wine made in the Chablis region. The wine is made from Chardonnay and Pinot Noir and matured in the old winery in the centre of Chablis using traditional techniques. Production is small and labour intensive and mostly undertaken by hand.
