Chablis is a small wine region producing dry and steely white wines located to the south of the Champagne region. The best vineyard sites, the Grand Crus, lie on the south-west facing slopes of the Serein Valley just outside the town of Chablis.

A range of wines from Coteaux de l'Auxois. In 1830 this area covered over 4,500 hectares but after extensive damage suring the phylloxera epidemic and two world wars, the region was forgotten. Simonnet-Febvre is part of the revivial of this area, they have 15 hectares of vineyards and there are 5 wines in this range.
