In 1840 Jean Febvre, a barrel cooper from Montbard, founded the winery which is now Simonnet-Febvre. Today it remains one of the oldest and most traditional Chablis producers in the region. As well as producing top-quality Grand Cru and Premier Cru Chablis, it makes regional wines such as Côte d'Auxerre and Irancy, and remains the only house in Chablis to produce the regional sparkling wine, Crémant de Bourgogne.
Maison Louis Latour bought the company in 2003, along with a small domaine of Grand Cru, Premier Cru and Chablis vineyards. Since then the wine and packaging has been given a 'makeover' and the company has moved to a new winery just outside Chablis, near the village of Chitry. Simonnet-Febvre is now headed up by Paul Espitalie. Paul has worked in California and all over France, before settling in Chablis for the last 10 years.
