Château des Demoiselles is a 300-hectare estate and of these, 72 are planted to Côtes de Provence vineyards, surrounded by olive groves and plane trees.
The estate uses a sustainable development approach, being awarded HVE 3 certification (High Environmental Value) and will be fully organic by 2022. It is also a pioneer in sustainable winemaking, being a Vignerons Engagés certified producer, the only sustainable development label dedicated to the wine world. There is a zero-waste policy too, recycling or making use of everything.
Our Côtes de Provence Cru Classé winegrowing process begins in the vines, adopting very strict growing practices, striving to obtain highly concentrated grapes. In the vineyard, attention is made to the dense vine planting and rigorous grape selection, worked by hand.
Yields are low, at 45hl/ha, compared with the 55ha requirement within the appellation, and this is crucial in developing highly concentrated fruit, with mechanical weeding, selective green grape picking and enriched soil through natural manure. There is targeted irrigation and leaf removal in allowing maximum light penetration and optimal grape ripening.
The winery is owned by Aurélie Bertin and the winemaking is managed by Marco Bealessio.
