The Domaine de Valmoissine is located on the site of the ancient monastery and university of Valmoissine in the village of Aups close to the Verdon gorge. It is a high altitude site and provides plenty of sunshine with cooler temperatures. This helps with ensuring the grapes ripen slowly, on low yielding vines, avoiding jammy flavours or too much alcohol. Winemaking is simple and employs traditional Burgundian techniques. | |
