Champagne Gosset team up with Marcus Wareing to create a new cuvée

Marcus Wareing and Champagne Gosset have joined forces to create a new and exclusive Champagne. The new cuvée, Le Cercle NV Marcus Wareing Special Edition is available at Marcus’ restaurants; Marcus at the Berkeley, The Gilbert Scott and Tredwells, from today.

The cuvée is the first collaboration of this kind for both parties. Odilon de Varine, Chef de Cave at Champagne Gosset commented how interesting it was to approach winemaking from a different perspective, with food pairing in mind from the start.

Marcus, with his Restaurant Manager Michael Deschamps, “came with their own tastes and their own ideas” and an impression of the finished wine. They worked with Odilon over a few months and many tastings before deciding on the final wine.

The resulting wine is designed to pair with Marcus’ style of cooking whilst also working well as an aperitif. It’s freshness and the avoidance of malolactic fermentation ensure it is still recognisably Gosset. The bottles have a dosage of 7.5g/l while the magnums have 6g/l. Michael Deschamps notes “the wine opens with a crisp clean nose and subtle notes of apples and pears. It lingers across the palate with a nutty, pithy, effervescent finish which is beautifully balanced with a touch of salinity. It is a great representation of the terroir.”

For Marcus Wareing this was a new experience and one that he will remember for a long time.  He says, ‘I saw the potential of champagne with food a few years ago when we helped to launch a new vintage of Gosset at Tredwells, I could see that Gosset was not just about bubbles, but about the complexity of its wines and their compatibility with great food. Working with Gosset to create my own special cuvée was an amazing experience. We are delighted to be serving it in all our restaurants.”

Provenance is key for Marcus and his farm in Kent provides increasing amounts of produce to his restaurants. When Marcus visited Gosset in Epernay this year, his first to the region, he saw for himself the terroir, the commitment and the history of the oldest wine house in Champagne.
