Christmas is the perfect time to indulge in something a little special, and with all the rich food traditional for this time of year you want to ensure that your wine pairings don’t weigh too heavy on your palate. Here, Le Cordon Bleu London’s Wine Development Manager, Matthieu Longuere MS, suggests a perfect wine to pair with a classically rich festive dessert.
"If you are looking for something fun to drink this Christmas, Piemonte is famous for the serious Barolo and Barbaresco, but there is another wine that could not be more different and yet more moreish, Bracchetto d’Acqui. A lightly sparkling, low alcohol, sweet but not cloying, red dessert wine bursting with raspberry and scented rose petal. This particular example, Brachetto d'Acqui Rosa Regale from Castello Banfi is ripe and juicy, and the perfect Christmas tipple.
It would work perfectly with a modern interpretation by Le Cordon Bleu of a classic Christmas dessert. Chestnut, Chocolate and Rum Bûche de Noel. The red berry of the Brachetto frames the nuttiness, the unctuousness and the chocolate present in this dish.
