The last of our flights is on a theme dear to hearts of many a person in the wine trade – food and drink matching. Not only have we matched some wines with recipes but we have also matched a cognac. Below are the wines and cognac but you’ll have to stop by the stand to see the recipes we’ve chosen to match…
MOMO, offspring in Maori, is a range of wines from Seresin Estate in Marlborough. An organic and biodynamic winegrower, Seresin uses some of its own grapes and selects sustainably and organically grown grapes from a single, dedicated grower to produce its MOMO wines. Just over 50% of the blend is fruit harvested from Seresin's three biodynamic vineyards which are certified by Demeter: Raupo Creek, Tatou and Noa. The other part is made up of fruit from three growers, with whom Seresin work closely to manage their vineyards in the Wairau and Waihopai valleys. Louis Latour Les Pièrres Dorées Pinot Noir 2015
The present Louis-Fabrice Latour has again recognised a need for a consistent and affordable Pinot Noir. Burgundy is prone to weather issues and so consistency can be hard to find. He decided to plant some experimental vines in the south of Burgundy where the soil is similar to the Cote d’Or but the soil is unsuitable for Gamay; it has too much limestone. 2015 is the first vintage of this wine and was produced in small quantities so there is a limit to availability until the 2016 vintage where production was larger. Les Pièrres Dorées is riper than Bourgogne Pinot Noir but also has more acidity.
Henry Fessy are a Beaujolais Cru specialist and the domaine includes vineyards in nine out of the 10 crus. Henry Fessy owns two and half hectares of vineyard in Morgon, which have an average age of 50 years old. The vines grow on granite and schist. One hectare is on the Côte de Py hillside and the other one and half hectares within the flatter Les Corcelettes vineyard. The Côte de Py wine brings structure and Les Corcelettes a juicy fruitier element to the final wine.
Wakefield Jaraman Cabernet Sauvignon 2014
Wakefield is a third generation family wine business and was founded in 1969 by Bill Taylor who was inspired by his love for the red wines of Bordeaux’s Medoc region. He was drawn to South Australia’s Clare Valley where his first 178 hectare vineyard was planted on the banks of the Wakefield River close to the village of Auburn. Now headed by Mitchell Taylor and run with the help of his two brothers their philosophy blends an ‘old world’ estate mind set with ‘new world’ winemaking innovation. Jaraman wines are created from the fusion of two exceptional parcels of fruit from iconic wine regions in Australia. The result is a single variety wine which is multi-dimensional, highlighting and enhancing the nuances of both terroirs. This wine is blended 55% Clare Valley and 45% Coonawarra fruit.
Cognac Frapin are made entirely on the family’s single estate which includes 240 hectares of vines surrounding the Château de Fontpinot. The whole property lies in the Grande Champagne area which is regarded as Cognac’s best appellation. This cognac is exclusively from the wine-making estate at the heart of Cognac's Premier Cru. This cognac is golden amber in colour. It develops a fruity grape and floral bouquet characteristic of Grande Champagne. There is also a discreet hint of vanilla from the tannin in the oak barrels in which it matures. The persistence of the flavours reflects a balance and a maturity that is already clearly marked.
